When it comes to feeding your family from your own garden, potatoes are King!  I have read many sources that say you should be planting at least 1/3 of all your garden space to potatoes.

Properly storing potatoes is just as important as growing them.  You need to get those potatoes to last from harvest in the fall until the first of your garden produce is ready to eat the following spring.  

You really don’t want several hundred pounds of potatoes going bad too quickly so proper storage is the key.

For hundreds of years, maybe thousands we have been storing root vegetables underground, where they grow, for months at a time. Potatoes are one of the most common foods that have sustained humanity over the years. 

You can hang or bury potatoes in the sand and they will keep for months at a time in a root cellar. 


Potatoes dehydrate very effectively. They can be sliced and dehydrated or even mashed and dehydrated!

Diced or shredded and dehydrated, the potato has many options and you can bring them back from this state in a form that is ready for use. 

Dried diced potatoes can be dropped right into the soup. Very simple. 


Another great means for storing potatoes long term is canning. Just like dehydration, there are many derivations of potatoes that can be canned and used in its many capacities.
